These egg recipes from around the world can be eaten from dawn to dusk. Eggs are used in so many delicious ways on different continents and this roundup will give you some great ideas.

Shakshuka

Shakshuka is not just a dish for Instagram. It tastes just as good, if not better than it looks. The sauce is made from tomatoes, peppers, olive oil, and spices like paprika, cumin, and cayenne pepper.

The eggs are poached by making divots in the sauce and cracking the eggs into them so that they cook in the sauce. You can optionally serve it with a harissa-garlic sauce for heat, fresh herbs, and crusty bread.

Tortilla Española

From the south of the Mediterranean we travel a little more north to Spain. Tortilla Española, or Spanish omelette, is one of the go-to dishes on a tapas menu. If you’re making it at home, however, you can gorge on this delight at any time of day!

Super comforting, a Spanish omelette is typically made by frying potatoes in oil, optionally with onion, before mixing it with beaten eggs and returning it to the pan. Serve it with fresh herbs and other Spanish tapas.

For a Turkish-influenced breakfast, try this hearty menemen. Made by mixing eggs with diced and/or grated tomato, Turkish peppers, and spices, this one-pan dish is rich and satisfying. Enjoy it with fresh bread.

Hearty Pepper and Egg Sandwich Recipe (Chicago-Style)

If you’re a sandwich lover, make this Chicagoan grab-and-go favorite at home. It consists of fluffy scrambled eggs and sauteed Italian frying peppers (or bell peppers) served in crusty French or Italian bread. Take things up a notch with cheese, onion, hot sauce, and more.

Frittata

Frittatas, like omelets, can be enjoyed with so many different fillings. These Italian baked egg dishes are like crustless quiches and can be eaten at any time of the day. Mushroom and goat cheese and spinach with sundried tomatoes and feta are two of my favorite frittata recipes.
