Homemade egg noodles are super easy and quick to make, yet are so delicious they can often be far better than the store-bought stuff! Here, we have a recipe for homemade egg noodles that we will use in our Moldovan-inspired chicken noodle soup.

A bonus interesting fact for you – in Moldova, they’re called “tăiÈ›ei de casă,” which translates to homemade noodles.

Homemade Egg Noodles Ingredients

This recipe is made using just two ingredients:

  • 2 eggs
  • 1.5 cups of flour

Step-by-Step Instructions and Photos

Step 1 – Into a medium-large bowl, crack two eggs.

Step 2 – With a fork, beat the eggs together until you have a golden liquid, as shown below.

Step 3 – Slowly incorporate 1.5 cups of flour and mix it well with the fork.

Step 4 – Knead the resulting dough for a few minutes until you have a ball of dough.

Step 5 – Transfer the dough to the table/counter or flat surface and knead it a bit longer. Make sure to dust the surface with flour, so the dough doesn’t stick to it.

We used about two tablespoons of flour when kneading. Make sure not to add salt or water, or the resulting noodles will be too soft.

Step 6 – Using a rolling pin, ‘spread’ the dough out into a thin, circular shape, until it’s about 2-3 mm thick.

Step 7 – Using a knife, cut them to your desired size. We first cut the round dough circle into equal strips and then cut the noodles the size we wanted for our chicken noodle soup. Make sure to dust them with a bit of flour so they don’t stick to each other.

Serving Suggestions

Chicken Noodle Soup – Use the noodles in whatever recipe you’re making. We used these homemade egg noodles in our chicken noodle soup (called “zeama” in Moldova) but you can use them for many other recipes.

You can also use them on their own. Just boil them in a pot of salted water for about 3 minutes (depending on the size you cut them) and serve them with anything you like, such as:

Pasta and Parmesan – Serve the noodles with your favorite pasta sauce and parmesan for a delicious main dish.

Honey – You could also enjoy these noodles with a generous drizzle of honey, for a simple dessert.

However you enjoy this dish, it still blows my mind to this day that these soft, melt-in-mouth noodles are only made from two basic ingredients.

This is typical of many Eastern European cuisines, and other cuisines around the globe, where filling, nourishing, and flavorsome food can be conjured up from the most basic of ingredients.
