Wash the strawberries and remove the stems. Cut the strawberries into bite-sized pieces.
Sprinkle the sugar over the strawberries in a bowl.
Pour the freshly-squeezed lime juice over the strawberries.
Give everything a mix, cover with saran wrap/cling film, and set aside in the fridge for about 30 minutes.
Put the cream in a chilled large bowl and using a hand mixer (or a whisk), beat the cream until you get soft peaks.
Add the icing sugar and mix just enough to combine.
Take two chilled glasses, and layer the strawberries and the cream. Make sure to add all the juice/syrup the strawberries let out while in the fridge. We found layering the strawberries, juice, and cream in a tall glass is a great way to enjoy this dessert, as you can reach in with a spoon and get a little of everything.
